Sunny, warm and dry with an after-school, colder weather recipe

This morning we have partly to mostly cloudy conditions with a high of 73ºF. Winds are SSW at 5 to 10 mph.

Tonight we’ll have cloudy skies and a low of 51ºF. Winds light and variable.

If you have teenagers you know what happens as soon as they get home from school.  They mount a full-scale “shock and awe” assault on the refrigerator.  Since you cannot stop the raids, you might as well make sure that there’s something for them easy to micro-wave, and is nutricious for them, not to mention a bit low in cost.  So, once the weather turns colder, try this recipe for refrigeration AFTER making it the night before. 

CHICKEN STEW:

Chicken broth

Mixed stew vegetables

Onion

Salt and pepper to taste

Cook chicken in the broth, add vegetables and cook until chicken is done.   OR: Add pre-cooked chicken into the broth with the vegetables. Cook until all vegetables are cooked. 

If you make this on a Sunday afternoon or evening, then refrigerate it, it will make for an easy after-school refrigerator raid target.

Also, remember, there is no such thing as “A teenager.” There is only the teenager and his/her friends. So you will need to make a judgement call at some point.  Do you want to bear the noise and expense of your teen’s friends being at your place, or worry about your teen being “out of sight” and over at someone else’s house.
