Here’s another outdoorsy meal for the kids and the “young at heart.” For those of you who are too young to know what that means, it means some of us are over age 60, but feel we have a teenager trapped inside.

CAESAR TURKEY SUBS

4 sandwiches

4 submarine sandwich rolls (6 to 8 inches) or 1 baguette (8 oz)

1/3 cup Caesar dressing

½ package (3.5-oz size) sandwich

sliced pepperoni

¾ lb sliced cooked turkey or chicken

4 slices (1 oz each) Colby-Monterey Jack cheese

4 slices tomato, cut in half

4 lettuce leaves

½ medium red onion,  thinly sliced

Cut rolls horizontially in half (if using baguetter, first cut into fourths).   Spread dressing over cut sides of rolls.  Layer bottom halves of rolls with pepperoni, turkey, cheese, tomato lettuce and onion.  Top with roll tops; press gently.  Secure with toothpicks.  Cut each sandwich diagonally in half. 

Substitution: Use any of favorite deli meats and cheeses instead of the pepperoni, turkey and colby-Monterey Jack cheese.
