Sun, cooler and a great truffle recipe

The truffle recipe I posted the other day was well received and resulted in requests for some different ones. So, here’s one I think you’ll like.
COCONUT-APRICOT TRUFFLES
Serves: 36
1½ cups whole, unsalted almonds
2 cups dried apricots
2 tsp. cinnamon
2 tsp. almond extract
½ cup sweetened shredded coconut
· In a food processor with the knife blade, thoroughly combine 1½ cups whole almond, 2 cups dried apricots, 2 tsp. cinnamon and 2 tsp. almond extract until the mixture forms a dough-like ball.
· Using your hands, firmly roll into 1-inch balls.
· Roll in ½ cup coconut.
