Cooler nights, warm days and a back-to-school lunch idea

Tonight we’ll have generally clear conditions  with a low of 49 ºF. Winds will remain light and variable.

When you send your little ones off to school with a lunchbox slung over their shoulder, remember a few basics beyond the usual nutritional and taste stuff.  By that I mean DO NOT give your child a lunch meal that requires him or her to use a knife and fork to eat.  Children who have been “caught” with a knife and fork in lunchrooms from their lunch box have been arrested for “bringing weapons” to school. So, since that forces you to deal with their worst fears over your child’s lunch, just avoid the issue altogether and make their lunch a sandwich or Tupperware plastic spork meal.

TROPICAL ISLE CHICKEN SALAD (Remember a cold pak for it in a lunchbox)

This meal can go as either a sandwich filling or on a few letuce leaves to eat with a spork.

Serves:  4 (scant ½ cup)

1½ cups diced cooked chicken breast

1 cup 8-oz. can crushed pineapple, packed in fruit juice, drained

2 tbsp. chopped slivered almonds

½ cup chopped celery

¼ fat-free mayonnaise

1 tsp. brown sugar twin

 

·         In a medium bowl, combine 1½ cups chicken, 1 can pineapple, 2 tbsp. chopped slivered almonds and ½ cup celery.

·         Add mayonnaise and brown sugar twin.  Mix well to combine.

·         Refrigerate at least 30 minutes.  Gently stir again just before serving.
