Tonight we’ll have mostly cloudy skies with a 50% chance of showers developing after midnight. Low 61 ºF. Winds SSE at 5 to 10 mph.

I haven’t had any of this recipe, but I sure plan on it.  It looks delicious!

CRUNCHY BEEF BURRIOS

Servings:  8 – 1 burrito each

Sauce:

8 oz. no-added-salt tomato sauce

¼ tsp. garlic powder

½ tsp. cumin

1/8 tsp. cayenne powder

½ tsp. dried jalapeno peppers (optional)

1 tbsp. lemon juice

1 tbsp. raisins (this sweetens the sauce)

Filling:

1 pound lean ground beef, cooked and drained

8 10-inch flour tortillas

4 oz. park-skim American cheese, shredded

1 /4 cup chapped scallions

·         Preheat oven to 350 degrees.

·         Mix  8 oz. tomato sauce, ¼ garlic powder, ½ tsp. cumin, 1/8 cayenne powder, 1 tbsp. lemon, juice and 1 tbsp. raisins together.  Pour over the drained beef and stir to mix.

·         Play ½ cup beef mixture in each tortillas, fold and place seam side down on a baking sheet. 

·         Top with 4 oz. cheese and ¼ cup scallions.

·         Bake uncovered for 15 minutes.

·         Serve with lettuce and tomatoes.  These burritos freeze well on sheets or in baking dishes.
