Warm with a great cake cookie recipe

Okay, now that the weather is starting to loosen up a little bit, how about a recipe that produces something you can put in a napkin and drop in your pocket while you're outside chipping up that stubborn patch of ice?

CREAM CHEESE CAKE MIX COOKIES (Oh yeah, Good!)

1 box cake mix, any flavor

8 oz. cream cheese, room temperature

¼ cup butter, room temperature (margarine is okay)

1 large egg

1 tsp. vanilla (optional, depending on cake mix flavor; substitute accordingly)

1 cup any add-ins (flavored chips, candy, nuts, etc.).  Amounts can be varied according to taste.

          For chocolate chip cookies, you might need a 12 oz. bag of chocolate chips.

DIRECTIONS:

Preheat oven to 375.  Cream together butter and cream cheese.  Add egg and vanilla; mix until well blended. 

Stir in cake mix a little at a time until it's all blended.  Add any add-ins you like.

Spoon onto a cookie sheet (line with parchment or foil), and bake for about 10 min. until edges are brown.  Cookie tops will feel soft but the inside should be almost dry with a good crumb.

Makes about 4 dozen cookies without snitching.
