Clearing, still above freezing and a top notch breakfast recipe

Good Morning Augusta

This morning we have Clouds early with peeks of sunshine expected late. Temps nearly steady in the mid 30s. Winds WSW at 10 to 20 mph.

Tonight we'll have clouds and a low of 26ºF. Winds will be from the W at 10 to 15 mph.

 We didn't receive any rain, but we did have just over 0.21 inches of snow melt.

The following  is one very tasty breakfast recipe.

BAKED EGGS WITH CANADIAN BACON OR HAM, SPINACH, AND CHEESE

3 T. butter, plus more to butter ramekins

2 T. minced onion

Salt and pepper

6 oz. baby spinach, washed and chopped

4 slices Canadian bacon or ham, chopped

4 large eggs

4 T. cream or half and half

1 oz. grated cheddar cheese

Toast

Heat oven to 350 and arrange rack in the middle.  Butter 4 ramekins or small ovenproof dishes.  Set aside.

Melt 1 T. butter in large skillet over medium heat.  Add onion, season with salt and pepper, and cook until soft, about 1-2 minutes.  Add spinach and cook until spinach is well wilted, about 2-3 minutes.

Place ham on bottom of ramekins, top with spinach.  Crack 1 egg into each ramekin, cover each egg with 1 T. cream, and top with grated cheese.

Put ramekins on baking sheet and bake (rotate pan halfway through baking), until whites are just set but yolks are still runny, about 15-18 minutes.  I like our eggs firmer, so I let mine bake about 24 min.

Serve with toast.
