Mild, sunny and a scrambled french toast recipe

Below is another breakfast recipe that takes some time to prepare, but it is definitely worth it.

SCRAMBLED FRENCH TOAST

2 eggs

1 cup milk

1 teaspoon vanilla

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

6 cups cubed day-old bread (1/2 inch cubes)

1 ½-2 tablespoons butter

¼ cup sugar (or to taste)

In a large bowl, beat eggs.  Add milk, vanilla, cinnamon, and nutmeg.  Add bread cubes and toss; let stand for 5 minutes.  Melt butter in a large skillet.  Add bread cubes and stir until cooked and browned.  Gradually add sugar; stir to coat evenly.  Cook until all sugar is dissolved, about 5 minutes.

1 serving = 1 cup, about 305 calories, 11 g fat, 127 mg cholesterol, 387 mg sodium.
