This morning we have just under one inch of snow out there, it’s cloudy with snow showers for morning hours and a high of 29 ºF. Winds NE at 5 to 10 mph. Chance of snow 70%. Snowfall around one inch. 

Tonight we’ll have cloudy skies with snow showers becoming a steady accumulating snow later on. Lows will be near 25 ºF. Winds will remain light and variable. Chance of snow 80%. Snowfall around one inch.

Humidity is 84%, the dew point is 14ºF, outside it’s -7.0ºC and 19.3ºF.

The wind direction is North between 4.3 MPH and  11.5 MPH, generating a wind chill of 10.4ºF.

I’ve received some suggestions that I post something about breakfast.  So, for those of you who are either college students or “rushed morning people,” here is a quick one for you.

Morning Egg sandwich using egg substitute

Slice one English muffin in half and toast it.

Find a dish that is roughly the same size as the English muffin

Using eggbeaters, usually found in a pint container,

Pour the equivalent of one egg, about ¼ cup of eggbeater into the dish and microwave it on high for about one minute.

Then remove it from the dish directly onto the English muffin. Place one slice of your favorite cheese on it and its done.

Serves one

You can add some diced up pre-cooked sausage links or paddies to it for added flavor and texture.

Note: Eggbeaters are much lower in fat and collesteral than regular eggs.  Be advised that, if you add cheese and some sausage or bacon to it, you’re raising the fat/colesteral level. So add accordingly.
