Colder, clear, sunny and another dietary type recipe

TROPICAL ISLE CHICKEN SALAD

Serves:  4 (scant ½ cup)

1½ cups diced cooked chicken breast

1 cup 8-oz. can crushed pineapple, packed in fruit juice, drained

2 tbsp. chopped slivered almonds

½ cup chopped celery

¼ fat-free mayonnaise

1 tsp. brown sugar twin

·         In a medium bowl, combine 1½ cups chicken, 1 can pineapple, 2 tbsp. chopped slivered almonds and ½ cup celery.

·         Add mayonnaise and brown sugar twin.  Mix well to combine.

·         Refrigerate at least 30 minutes.  Gently stir again just before serving.

Hint:  It’s equally good served on lettuce leaves or as a sandwich filling.

Blogger’s note: By the time these dietary oriented recipes are done being posted, you’ll have either chicken feathers, fish scales or feel like a bunny rabbit from all of the greens you’ll have eaten.  But hey, think of just how great you’ll look when June gets here and you slide into that Bikini and everything fits perfectly!  So, in the meantime, remember the basics of the dietary industry, which also happens to match up with what the medical profession professes:  Exercise, get plenty of sleep, and, with reference to food, if it tastes good, DO NOT eat it!
