Mild and rainy, and a Ginger Chicken Recipe

This morning we have rain early,with  Decreasing clouds and sunny skies by the afternoon. High will be near 45ºF. Winds are from the SW at 10 to 20 mph. Chance of rain 90%.

GINGERED CHICKEN BREAST

Serves:  4

1 tbsp. fresh lemon juice

1½ grated fresh ginger

½ tsp. freshly ground black pepper

2 cloves garlic

4 boneless, skinless chicken breast halves

·         Combine 1 tbsp. lemon juice, 1½ tsp. ginger, ½ tsp. black pepper and 2 cloves of garlic in a small bowl.

·         Place the chicken breast in a deep bowl.  Pour the ginger mixture over the breasts, turning once to coat both sides.  Cover, and refrigerate for 30 minutes to 2 hours.

·         Spray a large nonstick skillet with cooking spray.  Heat the skillet on medium-high until hot.  Add the chicken.

·         Cook, turning once, until tender, about 8 minutes.
