COCONUT-APRICOT TRUFFLES

Serves:  36

1½ cups whole, unsalted almonds

2 cups dried apricots

2 tsp. cinnamon

2 tsp. almond extract

½ cup sweetened shredded coconut

 

  • In a food processor with the knife blade, thoroughly combine 1½ cups whole almond, 2 cups dried apricots, 2 tsp. cinnamon and 2 tsp. almond extract until the mixture forms a dough-like ball.
  • Using your hands, firmly roll into 1-inch balls.
  • Roll in ½ cup coconut.
