#MEwx wind advisory, snow, rain and Summer Chicken Kabobs

We're under a wind advisory until 9 tonnight and it's SNOWING out there! So, DO NOT look outside – just go back to bed. Maybe it'll all be gone when you wake up again.

This morning we have snow, yes for real it's snowing. Also, some  rain or snow mainly this morning. Total snow accumulation of 1 to 3 inches. Highs will get into the lower 40s with northwest winds 15 to 25 mph. Gusts up to 40 mph,

increasing to 50 mph this afternoon are possible.  

Tonight it will be mostly cloudy with a chance of rain or snow showers during evening hours, then partly cloudy after midnight. Lows in the lower 30s. West winds 15 to 20 mph,  gusting to 35 mph.

SUMMER CHICKEN KABOBS

4 servings/serving size:  3 oz chicken

¼ cup lime juice

2 tbsp olive oil

1 tbsp minced parsley

½ tsp dried thyme

1 garlic clove, minced

fresh ground pepper

2 whole boneless, skinless chicken breasts, cubed

1 small yellow squash, cut into 2-inch pieces

1 small zucchini, cut into 1-inch pieces

4 large cherry tomatoes

 

In a shallow dish, combine lime juice, oil, parsley, thyme, garlic, and pepper; mix well.  Add chicken, yellow squash, and zucchini, tossing to coat.  Cover and refrigerate for 2 hours.  Alternate chicken, squash, and zucchini onto each skewers.  Grill 4 inches from heat for 10 minutes, turning frequently.  Add cherry tomatoes to each skewer during the last 1 minute of cooking.   Remove from heat and serve.
