#MEwx cold with wind chills and a fantastic leftover Turkey recipe

Our outdoor temperature is 16.3°F, the humidity is 41%, the Dew Point is -3.3°F and our wind chill is 9.9°F.

The wind direction is East Northeast between 8.9 MPH and 12.3 MPH.  

The Relative pressure is 29.83, the Absolute pressure is 29.63 and falling with a weather graphic indicating snow.

Visibility is 10.0 Miles with clear and sunny skies.

We didn’t receive any snow here over the past 24 hours.

Here’s another very popular leftover turkey recipe, especially from “down South” where I lived for a good part of my life.

TURKEY JAMBALAYA

 

Serves 4 to 6

 

1 (15 oz) can stewed tomatoes, undrained

1 package vegetable soup & dip dry mix

¾ tsp crushed red pepper

2 cups chopped turkey

1 cup ham, cut into matchsticks

2 Cups Water

 

In a large skillet, combine the 15 oz. can of stewed tomatoes, 2 cups of water, one package of vegetable soup/dip mix and ¾ Tsp red pepper. 

Bring to a boil, stirring well.  Reduce heat, cover and simmer for 15 minutes. 

Stir in the 2 cups of chopped turkey; cook 5 minutes longer. 

Serve over some hot wild, cooked rice.

Personal note: I’d put some good Bourbon in it too, this gives it a bit of a kick as long as you put it in when it isn’t at a boil that causes the alcohol to evaporate out of it.
