Snow storm bearing down on us and how to make a great New Orleans style Jamb alaya

Good Morning Augusta

 There’s about a foot of snow coming today folks.  If you haven’t picked up the emergency groceries and gas for the snowblower and generator you’d better get it in gear. We’re going to get hammered.

This morning we have 5 to 8 inches of snow coming, starting  with showers, with steady snow developing later in the day. High around 25°F. Winds NE at 5 to 10 mph.

Tonight we’ll have a possibility for some sleet or freezing rain this evening with 1 to 3 inches of snow giving way to some clearing late. Low 17°F. Winds NNW at 10 to 15 mph.

 

The readings from my weather instruments are:

Humidity is 70%, the Dew Point is 4.5°F and the outdoor temp is 12.4°F.

The wind direction is   West between 0.0 MPH and 0.1 MPH, generating a wind chill of 12.4°F.

The Relative pressure is 30.15, the Absolute pressure is 29.94 and falling with a weather graphic indicating snow.

The UV rating is 0 out of 16, Sunrise is 6:49 a.m. Sunset is 4:57 p.m., Moonrise is 12:02 a.m., Moonset is 10:49 a.m. and the Moon Phase is Waning Gibbous being 69% illuminated.

We didn’t receive any rain or snow over the past 24 hours, but that’s about to change.

Since the storm is about to hammer us, hunker down and make this for dinner.

Miss Lil’s Jambalaya

Note: Miss Lil is a real person  who worked for “Bob the Chef” in Boston. As far as I know, that establishment, sadly, is no longer in business.  Having dined there, I’m in mourning.

1/2 lb margarine

2 lb smoked beef sausage

2 c. chopped onions

2 c. chopped celery

1 c. diced red pepper

2 c. chopped canned tomatoes

2 lb diced boneless chicken

1.5 lb shrimp (P&D)

2 tbsp crushed red pepper

4 tbsp Cajun seasoning

2 c. tomato puree

1/2 cup dry chicken base

3 c. rice (uncooked)

3 c. water 

Sauté onions, celery, peppers, chicken, and sausage in margarine for 10-15 minutes.

Add seasonings, tomatoes, and tomato puree.

Continue to cook for 5 minutes more.

Add rice and stir until mixed well.

Add chicken base and water.

Bring to a boil for 20-25 minutes.

    Most of the water should be absorbed and the rice should be a little moist.

Add shrimp, cook only until shrimp is done (takes only a few minutes). 

Yield: 8 lbs.

(I’d put some good bourbon in it myself)
