Near freezing with snow and rain on the way - a good, basic Yellow cake recipe

Good Morning Augusta

This morning we have becoming cloudy with  roughly one inch of snow this afternoon. High around 35°F. Winds will be SE at 5 to 10 mph. 

Tonight we'll have a sloppy wintry mix for this evening. Clouds will linger late with a low of 31°F. Winds SSW at 5 to 10 mph.

Today's Solar flux is 70, the solar wind speed is 552  Kilometers per second and the chance of a solar storm is 1%.

Everyone likes a good Yellow Cake, especially if you add in chocolate chips or top it with chocolate frosting. Why not both? 

YELLOW CAKE

1 ¾ cups all-purpose flour

½ Tblsp. baking powder

¼ tsp. salt

½ cup milk

½ tsp. vanilla

1 stick butter, very soft

1 cup sugar

2 eggs, room temperature

Preheat oven to 350.

In a large bowl, mix flour, baking powder, and salt.  Add milk, vanilla, softened butter, sugar, and eggs.  Stir until smooth, pour into an 8"x8" greased baking pan.

Bake 25-30 minutes or until toothpick comes out clean from middle of cake.

Frost as desired.  Sweetened whipped cream with crushed strawberries is really good as a frosting.

Options:  add chocolate chips (any size), nuts, etc.  Or split and fill with vanilla pudding, top with chocolate frosting.

This recipe can easily be doubled.  Bake in two 8" cake pans, or one 9"x13" pan.  Check baking time accordingly.
