Here is a delicious recipe for leftover turkey. I’ve had this and I tell ya, it’s great!

TURKEY JAMBALAYA (For those of us who were raised in the deep, deep South, this recipe can remind you of New Orleans. Well, except for thelack of rum.)

Serves 4 to 6

1 (15 oz) can stewed tomatoes, undrained

1 package vegetable soup & dip dry mix

¾ tsp crushed red pepper

2 cups chopped turkey

1 cup ham, cut into matchsticks

2 Cups Water

In a large skillet, combine the 15 oz. can of stewed tomatoes, 2 cups of water, one package of vegetable soup/dip mix and ¾ Tsp red pepper.

Bring to a boil, stirring well.  Reduce heat, cover and simmer for 15 minutes.

Stir in the 2 cups of chopped turkey; cook 5 minutes longer.

Serve over some hot wild, cooked rice.
