Mild temps, sun and a recipe for leftover turkey

Happy Holidays everyone! It’s that time of year when you’re faced with a fridge load of Turkey leftovers and a lack of ideas about what to do with all of it.  Take heart – From today into next week I’ll be posting turkey leftover recipes.  Even if you plan to freeze the remnants of that noble bird, you’ll still need to know what to do with it, other than make those all-important cold turkey sandwiches.

So here’s recipe #1. Enjoy!

TURKEY BROCCOLI CASSEROLE

Serves 6 or 8

1 can cream of chicken soup

¾ cup nonfat milk

3 cups diced cooked turkey

1 (10 oz) box) frozen broccoli spears, thawed

1 (16 oz) box stuffing mix (prepared according to directions) OR use 8 to 10 cups of leftover dressing

Heat soup and milk, just enough to be able to mix well.  Pour into a greased 9” x 13” baking dish.  Layer turkey over the soup; layer the broccoli on top.  Top with stuffing or stuffing mix.  Bake covered at 350 degrees for 50 minutes.
