Cold, sunny and how to make Russian Rhubarb

RUSSIAN RHUBARB
1 lb fresh rhubarb, trimmed, cut into 1-inch pieces (about 2 cups)
1 stick cinnamon
2 tbsp frozen orange juice concentrate
1 cup strawberries, sliced
1 tbsp filberts (hazelnuts), chopped
Place rhubarb, cinnamon stick and orange juice in 1 quart glass casserole. Cover with vented plastic wrap, and microwave on High for 3 to 4 minutes. Stir, and microwave on High for another 3 to 4 minutes, covered. When rhubarb is tender, add strawberries and let rest 5 minutes. Discard cinnamon stick before serving, warm or chilled. Serve with sprinkling of filberts.
