Clouds with rain/snow moving in and a really good Chicken Soup recipe

This morning we have clouds with occasional rain up to half an inch this afternoon. High near 45ºF. Winds ESE at 5 to 10 mph.

Tonight we’ll have clouds and a 90% chance of rain up to ¼ inch, becoming partly cloudy. Snow may mix in. Low to 34 ºF. Winds NW at 5 to 10 mph.

Okay folks, now that we’re officially into the rain/snow weather, you’re probably thinking of your favorite “Comfort Food” for dinner.  But which one?  Why not try this one:

AFTER-WORK CHICKEN NOODLE SOUP

6 servings

Prep:  10 min.   Cook:  20 min

4 cans (14 ½ oz each) reduced-sodium chicken broth

2 cups cut-up cooked chicken

1 cup frozen green peas

1 tsp dried thyme leaves

¼ tsp pepper

2 medium stalks celery, chopped (1 cup)

2 medium carrots, sliced (1 cup)

1 medium onion, chopped (½ cup)

2 cloves garlic, finely chopped

1 cup uncooked wide egg noodles (2 oz)

 

Heat all ingredients except noodles to boiling in 3-qt. Saucepan.  Stir in noodles.  Heat to boiling; reduce heat.  Simmer uncovered 10 to 15 minutes, stirring occasionally, until noodles and vegetables are tender.  

By the way, modern science shows that chicken soup REALLY does have some medicinal value.  See? Your grandmother was right.
