We all know that there will be leftover turkey after the big meal. So, for the next few days leading up to Thanksgiving I'm going to post recipes featuring leftover turkey. Don't throw away any of that turkey. Save it and use it up later on.

 

TURKEY BROCCOLI CASSEROLE

Serves 6 or 8

1 can cream of chicken soup

¾ cup nonfat milk

3 cups diced cooked turkey

1 (10 oz) box) frozen broccoli spears, thawed

1 (16 oz) box stuffing mix (prepared according to directions) OR use 8 to 10 cups of leftover dressing

 

Heat soup and milk, just enough to be able to mix well.  Pour into a greased 9" x 13" baking dish.  Layer turkey over the soup; layer the broccoli on top.  Top with stuffing or stuffing mix.  Bake covered at 350 degrees for 50 minutes.
