#MEwx Warm and muggy again with aTropical Isle Chicken Salad
  This   morning we have partly sunny skies with a slight chance for showers this afternoon. Highs in the upper 70s with west northwest winds around 10 mph, becoming west this afternoon.  
  Tonight   we'll have cloudy conditions with a chance of showers, mainly in the evening. Lows in the upper 50s with light and variable winds.

  Here's   another  healthy and generally vegetarian recipe to keep you all healthy, wealthy and wise. So, to be fair to everyone who reads this blog I'll be posting things for those who prefer a lot of vegetables.
  
  Since   it's been hot and muggy, might as well have something reminiscent of the tropics.  
TROPICAL   ISLE CHICKEN SALAD
Serves:    4 (scant ½ cup)
1½   cups diced cooked chicken breast
1   cup 8-oz. can crushed pineapple, packed in fruit juice, drained
2   tbsp. chopped slivered almonds
½   cup chopped celery
¼   fat-free mayonnaise
1   tsp. brown sugar twin
- In   a medium bowl, combine 1½ cups chicken, 1 can pineapple, 2 tbsp. chopped slivered almonds and ½ cup celery.
 - Add   mayonnaise and brown sugar twin.  Mix well to combine.
 - Refrigerate   at least 30 minutes.  Gently stir again just before serving.
 
Hint:    It's equally good served on lettuce leaves or as a sandwich filling.
