#MEwx Cloudy and warm with a Greek Salad

  Yes,   I know, there's more to healthy eating than salads – but salads are cold meals and taste darn good, not to mention being good for you.
  
GREEK   SALAD                  
Serves:   1
8   leaves romaine lettuce, torn into bite-size pieces
1   cucumber, peeled, seeded, and sliced
1   tomato, chopped
½   cup sliced red onion
½   cup crumbled reduced-fat feta cheese
2   tbsp. extra-virgin olive oil
2   tbsp. fresh lemon juice
1   tsp. dried oregano leaves
½   tsp. salt
- Combine   8 leaves lettuce, 1cucumber,  1 tomato, ½ cup onion, ½ cup feta cheese in a large bowl.
 - Whisk   together the 2 tbsp. olive oil, 2 tbsp. lemon juice, 1 tsp. oregano leaves and ½ tsp. salt in a small bowl.
 - Pour   over the lettuce mixture and toss until coated.
 
This   makes a nice accompaniment as a side salad for grilled chicken or fish.
