#MEwx Fog, clouds and rain with a Fiesta Salad

FIESTA SALAD
Serves: 4
Serving size: ¼ of recipe
2 11-oz can Mexican-style corn, drained
½ cup rinsed and drained kidney or black beans
2 tsp dehydrated minced onion
½ cup prepared salsa
2 slices reduced-fat American cheese, torn into small pieces
Lettuce leaves to serve on
12 cherry tomatoes, halved
Combine corn, beans, onion, salsa and cheese in a medium bowl. Spoon mixture onto lettuce leaves and top with cherry tomatoes.
