MEXICAN BEAN-NOODLE BAKE

Serves:  4

 

1                    (16-oz.) can pinto beans, rinsed and drained

½ cup frozen whole kernel corn

½ cup chunky salsa

1 cup (8-oz.) can tomato sauce

2                    tsp. chili seasoning mix

1/8 tsp. black pepper

1½ cups cooked noodles, rinsed and drained

¾ cup shredded reduced-fat Cheddar cheese

 

  • Preheat oven to 350 degrees.  Spray an 8-by-8-inch baking dish with olive-flavored cooking spray.
  •  In a large skillet sprayed with olive-flavored cooking spray, combine 1 can pinto beans, ½ cup corn, 1 cup salsa, 1 cup tomato sauce, 2 tsp. chili seasoning mix, and 1/8 black pepper.
  • Cook over low heat 10 to 15 minutes, stirring occasionally.  Stir in 1½ cups noodles.
  • Pour mixture into prepared baking dish.  Sprinkle ¾ cup Cheddar cheese evenly over top.
  • Bake 20 to25 minutes.  Place on baking dish on a wire rack and let sit 5 minutes.

 

HINT:  1¼ cups uncooked noodles usually cook to about 1½ cups.
