Let's stick with the slim-down recipes. "Fight fat, think thin" BTW, buy yourself a new swim suit and a pair of white shorts, moisture-whicking T0shirt and sun-reflecting one-way sunglasses (You know the mirrored jobs that make others wonde if you're watching them or not). Oh yes, and don't forget the suntan SPF of your choosing. Hey, get a jump on it before everything turns warm and supplies dry up. 

APPLE CHEDDAR SALAD

 

Serves:  4 (2/3 cup)

 

1½ (3 small) unpeeled diced Red Delicious apples

½ cup chopped celery

1/3 cup shredded reduced-fat cheddar cheese

2 tbsp. chopped walnuts

¼ cup fat-free mayonnaise

1 tsp. lemon juice

2 tbsp. Splenda

 

  • In a medium bowl, combine 3 apples, ½ cup celery, 1/3 cup cheddar cheese, and 2 tbsp. walnuts. 
  • In a small bowl, combine ¼ cup mayonnaise, 1 tsp. lemon juice, and 2 tbsp. Splenda.
  • Add mayonnaise mixture to apple mixture. Mix well to combine.
  • Cover and refrigerate at least 30 minutes.  Gently stir again just before serving.
