A few folks have been muttering darkly because I’ve posted a lot of chicken and fish meals lately. The reason I’m doing this is because those meats tend to be things that a heck of a lot of people put in their freezer and either forget about or avoid cooking. So, with this “Stay at home”  mandate we’re all under I have tried to post things that a majority of people might have on hand so that they don’t have to go out shopping yet.

Meanwhile, if you have any leftover chicken, make this for dinner tonight.

CHICKEN CHOW MEIN

Serves:  4

 

1 cup celery, sliced on diagonal

1 medium green pepper, seeded, cut into thin strips

1 medium onion, cut into thin wedges

1 tsp canola or olive oil

1 cup mushrooms, sliced

12 oz fresh bean sprouts, rinsed, drained

8 ounces water chestnuts, rinsed, drained

2 oz pimentos, drained, chopped

2 tbsp reduced-sodium soy sauce

½ cup Chicken Broth

t tbsp oat bran

¾ Poached Chicken (or turkey) Breasts, sliced thinly grain

 

In 2-qt glass measure or casserole, combine celery, green pepper, onion, and oil.  Microwave on High until tender, about 3 to 4 minutes, stirring once.

Microwave mushrooms for 2 minutes in separate dish and drain when tender.  Combine with vegetables, along with bean sprouts, water chestnuts, and pimentos.  Mix soy sauce, chicken broth and oat bran and add to vegetables.  Cover with wax paper and microwave on High 5 to 6 minutes, stirring twice.  Add chicken or turkey pieces, mix, and let stand covered, for 6 to 7 minutes until warmed through.  Microwave on High for another minute to heat if necessary.  Serve with brown rice and a few chow mein noodles.
