Let’s end “fish week” with Salmon Loaf.

SALMON LOAF

Serves:  4

Nonstick cooking spray

1-lb can red or pink salmon, drained and flaked

8 soda crackers, crushed

¼ cup egg substitute

10-oz can reduced-fat cream of celery soup

1 tbsp lemon juice

¼ tsp salt

¼ tsp white pepper

 

1.                  Preheat oven to 400 degrees.  Spray a one-qt baking dish with cooking spray.

2.                  Combine all ingredients in a medium mixing bowl.

3.                  Spread salmon mixture in the baking dish and bake for 30 minutes.
