#MEwx cold with snow and ice moving in tonight, and a Tropical Isle salad for dinner

We’re under another winter weather advisory from 11 tonight to noon tomorrow for 3-6 inches of snow and a glaze of ice. Read the complete advisory in the post preceding this one.

This morning we have mostly sunny skies with highs in the mid 20s and light and variable winds.

Tonight we’ll have cloudy skies with  a chance for snow this evening, then snow after midnight. Snow accumulation of 2 to 4 inches. Lows in the lower 20s with light and

variable winds.

Visibility is 10.0 miles / 16.1 Kilometers with clear skies.

The UV rating is 1 out of 16, Sunrise is 6:31 A.M., Sunset is 5:14 P.M., Moonrise is 6:41 P.M., Moonset is 7:22 A.M. and the moon phase is a full, snow moon super moon.

We didn’t receive any snow here over the past 24 hours.

With wind chills and snow still happening around us a food that helps a Tropical island fantasy is as mentally appealing as it is dietarily. Make this and get back on the treadmill.

TROPICAL ISLE CHICKEN SALAD

 

Serves:  4 (scant ½ cup)

 

1½ cups diced cooked chicken breast

1 cup 8-oz. can crushed pineapple, packed in fruit juice, drained

2 tbsp. chopped slivered almonds

½ cup chopped celery

¼ fat-free mayonnaise

1 tsp. brown sugar twin

 

  • In a medium bowl, combine 1½ cups chicken, 1 can pineapple, 2 tbsp. chopped slivered almonds and ½ cup celery.
  • Add mayonnaise and brown sugar twin.  Mix well to combine.
  • Refrigerate at least 30 minutes.  Gently stir again just before serving.

 

Hint:  It’s equally good served on lettuce leaves or as a sandwich filling.
