Sunny, warm and summer chicken kebobs

SUMMER CHICKEN KABOBS
4 servings/serving size: 3 oz chicken
¼ cup lime juice
2 tbsp olive oil
1 tbsp minced parsley
½ tsp dried thyme
1 garlic clove, minced
fresh ground pepper
2 whole boneless, skinless chicken breasts, cubed
1 small yellow squash, cut into 2-inch pieces
1 small zucchini, cut into 1-inch pieces
4 large cherry tomatoes
In a shallow dish, combine lime juice, oil, parsley, thyme, garlic, and pepper; mix well. Add chicken, yellow squash, and zucchini, tossing to coat. Cover and refrigerate for 2 hours. Alternate chicken, squash, and zucchini onto each skewers. Grill 4 inches from heat for 10 minutes, turning frequently. Add cherry tomatoes to each skewer during the last 1 minute of cooking. Remove from heat and serve.
