Hot, muggy and a great baked apple recipe

Getting back to this being “apple season” let’s go back to a favorite:

BETTE’S BAKED APPLES

4 McIntosh apples, cored

2 tbsp raisins

2 tbsp sunflower seeds

1 tsp powdered cinnamon

2 tbsp frozen apple juice concentrate

1 tbsp water

Peel away about ½ inch of skin from top of apples and pierce with a fork in several places.  Fill cores with raisins, sunflower seeds, a few dashes of cinnamon, and a dab of apple juice.  Place in deep baking dish, add water and cover with vented plastic wrap.  Microwave on High for 5 to 6 minutes, turning dish once.  Spoon sauce over apples and serve warm or chilled.
