1 tablespoon margarine
3/4 cup lowfat 1% milk
3 large eggs
1/2 cup + 1 Tablespoon flour
1 tablespoon sugar
Place 1 tablespoon margarine in iron skillet in 400F oven for 3 minutes.
Meanwhile, combine 3/4 cup lowfat 1% milk, 3 large eggs, 1/2 cup + 1 Tablespoon flour and 1 tablespoon sugar (I'd use less than 1 tblsp) in bowl, blender, etc. and blend until smooth. Pour into a hot skillet and bake 25-30 min. until puffed and golden. Cut into wedges and place on plates. Top with [french vanilla] nonfat yogurt and fruit of choice, either fresh or frozen.
