Clear, slightly cooler and another seasonal pie recipe

This morning we have a mix of sun and clouds with a high near 75ºF. Winds are from the NNE at 10 to 20 mph.

Tonight we’ll have partly cloudy conditions with a low of 52 ºF. Winds NNE at 10 to 15 mph.

Today’s Solar flux is 75, the solar wind speed is 418 Kilometers per second and the chance of a solar storm is 1%.

Since it’s autumn, let’s get away from apples and get into other favorite tasty pies for this time of year. How about a slice of:

PUMPKIN/SQUASH PIE

Serves 8

1 unbaked 9 inch deep-dish pie shell

2 eggs or ½ cup egg substitute

2 cans (16 oz) pumpkin OR squash

1 tsp pumpkin pie spice

2/3 cup low fat evaporated milk

½ cup Splenda

Beat eggs lightly in large bowl.  Stir in pumpkin, pumpkin pie spice and low fat evaporated milk.  Pour into pie shell.  Cut 2 inch wide strips of foil and cover pie crust edges.   This will keep pie crust from getting too brown.  Bake at 400 degrees for 15 minutes.  Reduce temperature to 350 degrees and bake for 50 more minutes or until knife inserted in center come out clean.  Cool.
