#MEwx Temps in the 70's again and Irish Cream Brownies

I've put up a new Ambient WS 5000 weather station where you can view real time readings online here.

This morning we have clouds with patchy fog. Isolated showers this afternoon, highs in the upper 70s with light and variable winds, becoming south around 10 mph this afternoon.

Tonight we'll have mostly cloudy conditions with scattered showers and isolated thunderstorms during evening hours, then isolated showers after midnight. Areas of fog after midnight. Lows in the lower 60s with south winds around 10 mph in the evening, becoming light and variable.

We didn't receive any rain here over the past 24 hours.

The wind is Northeast between  1.3 MPH and 2.1 MPH.

The Relative pressure is 29.72, the Absolute pressure is 29.52 and falling with a weather graphic indicating sun and clouds/rain.

The outdoor temperature is 63.3°F, the dew point is 61.2°F, the heat index is 63.3°F and the humidity is 94%.

IRISH CREAM BROWNIES

1 cup all purpose flour

½ cup unsweetened cocoa

¼ tsp baking soda

¼ tsp salt

1/3 cup chocolate chips

¼ cup butter

1 cup sugar

2 eggs or ½ cup egg substitute

¼ cup Bailey's Irish Cream (Well…)

1 tsp vanilla

Cooking spray

 

Preheat oven to 350.

Combine with a whisk flour, cocoa, baking soda, and salt in a small bowl.

Place chocolate chips and butter in a large microwave-safe bowl.  Microwave at high 1 ½ minutes or until chocolate and butter melt, stirring every 30 seconds.  Cool slightly.

Add sugar and next 3 ingredients (through vanilla), stirring well with a whisk.

Microwave at high 1 minute until sugar dissolves, stirring every 30 seconds. 

Fold in flour mixture, stirring just until moist.

Spread batter in a thin layer into a 9-inch square baking pan coated with cooking spray.

Bake at 350 for 20 minutes until wooden pick comes out almost clean to avoid overcooking.

Cool on wire rack.  16 servings.
