#MEwx Foggy, rainy with temps in the 50's and Fresh Fish Chowder

We're under a dense fog advisory UNTIL 11 AM this morning.

This morning we have cloud and thick fog. A chance of showers mainly during morning hours. Visibility is one quarter mile or less at times with highs in the upper 50s. Winds are south around 10 mph.

Tonight we'll have cloudy conditions  with a chance of rain after midnight with  patchy fog. Lows in the mid 40s with light and variable winds.

The wind direction is northwest between 0.0 MPH and 0.1 MPH.

Rainy and generally crumby weather out there today, so make this and stay inside.

FRESH FISH CHOWDER

6               Servings

You can use almost any fish in this chowder—we've suggested halibut.

 

2 tbsp olive oil

1 large garlic clove, minced

1 small onion, chopped

1 large green pepper, chopped

1 lb crushed tomatoes

1 tbsp tomato paste

½ tsp dried basil

½ tsp dried oregano

¼ cup dry red wine

Dash of salt and pepper

½ cup uncooked white rice

½ lb fresh halibut, cubed

2 tbsp chopped parsley

 

1.                  Heat the olive oil in a 3-quart saucepan.  Add the garlic, onion, and green pepper; sauté for 10 minutes over low heat until vegetables are tender.

2.                  Add the tomatoes, tomato paste, basil, oregano, wine, salt, and pepper.  Let simmer for 15 minutes.  Add the rice and continue to cook for 15 minutes.

3.                  Add the halibut and cook for about 5 to 7 minutes until fish is cooked through.  Garnish stew with chopped parsley and serve.
