My favorite chicken recipes call for the skins to be crunchy, like this one.

CRUNCHY GARLIC CHICKEN

6 servings

Prep: 30 Min Bake: 25 Min

2 tbsp butter or margarine, melted

2 tbsp milk

1 tbsp chopped fresh chives

½ tsp salt

½ tsp garlic powder

2 cups Country® Corn Flakes cereal, crushed (1 cup)

3 tbsps chopped fresh parsley

½ tsp paprika

6 boneless, skinless chicken breast halves

2 tbsps butter or margarine, melted

Heat oven to 425.° Spray rectangular pan, 13”x9”x2”, with cooking spray.  Mix 2 tbsp butter, the milk, chives, salt and garlic powder. Mix crushed cereal, parsley and paprika. Dip chicken into milk mixture, then coat lightly and evenly with cereal mixture. Place in pan. Drizzle with 2 tbsp butter.  Bake uncovered 20 to 25 minutes or until chicken is no longer pink when centers of thickest pieces are cut.
