#MEwx Warm temps, rain/freezing rain and how to make your own Bailey's Irish Cream and Egg Nog

We’re under a winter weather advisory and Flood Watch, so be careful out there.

This morning we have rain and freezing rain, with rain this afternoon. Areas of fog this morning and this afternoon. Rain may be heavy at times. Ice accumulation of up to a tenth of an inch. Highs in the lower 50s. East winds around 10 mph, becoming southeast this afternoon.

Tonight we’ll have rain with areas of fog. Rain may be heavy at times. Not as cold with lows in the upper 40s. South winds 10 to 15 mph with gusts up to 35 mph.

The Wind Chill is 30.0°F, Dew Point is 31.5°F, the humidity is 94%, and the outdoor temp is 33.1°F.

The wind direction is East between 4.0 MPH and 4.9 MPH.

The Relative pressure is 29.79, the Absolute pressure is 29.59 and falling with a weather graphic indicating rain and freezing rain.

Visibility is 10.0 miles / 16.1 Kilometers with overcast skies to 200 ft / 60 m.

The UV rating is 0 out of 16, Sunrise is 7:11 A.M., Sunset is 4:02 P.M., Moonrise is 3:25 P.M., Moonset is 5:38 a.M. and the moon phase is Waxing Gibbous being 98% illuminated.

We received 0.03 inches of “precipitation” so far during the past 24 hours, and that will change as the rain starts and ice/snow melts.

Today’s recipes are how to make your own Egg Nog and Bailey’s Irish Cream. Yep, this is another “grownups” post.

Enjoy everyone, you’ll need a supply of good booze when the Christmas credit card bills start showing up.

Homemade Baileys Irish Cream (This is but one of many, many recipes for it online, so feel free to look at others if you wish) 

Ingredients

•1 cup light cream (I used heavy whipping cream, which made it even richer)

• 14 ounces sweetened condensed milk

• 1 2/3 cup Irish whiskey (I used Jameson's)

• 1 teaspoon instant coffee

• 2 tablespoons chocolate syrup

• 1 teaspoon vanilla

• 1 teaspoon almond extract (I skipped this entirely)

Instructions

1.Combine all ingredients in a blender and set on high speed for 30 seconds.

2. Bottle in a tightly sealed container and refrigerate. Shake before using.

3. Will keep for up to 2 months.

 

 

*Holiday eggnog (George Washington recipe)

“One quart cream

one quart milk

one dozen tablespoons sugar

one pint brandy

½ pint rye whiskey

½ pint Jamaica rum

¼ pint sherry

mix liquor first, then separate yolks and whites of 12 eggs, add sugar to beaten yolks, mix well. Add milk and cream, slowly beating. Beat whites of eggs until stiff and fold slowly into mixture. Let set in cool place for several days. Taste frequently.”

And do NOT drive.

 

Ultimate eggnog recipe (This is one of Jamie Olivr’s best one.

Serves 8

•3 cups (700ml) whole milk

•1 cup (240ml) heavy or double cream

•3 cinnamon sticks

•1 vanilla bean pod, split and seeds removed

•1 teaspoon freshly grated nutmeg, plus more for garnish

•5 eggs, separated

•2/3 (130g) cup granulated sugar

•3/4 cup (175ml) Bacardi Dark Rum, or bourbon

In a saucepan, combine milk, cream, cinnamon, vanilla bean, vanilla seeds, and nutmeg. Bring to the boil over a medium heat. Once boiling, remove from the heat and allow to steep.

In a large bowl or stand mixer, beat egg yolks and sugar until combined and thick ribbons form when the whisk is lifted. Slowly whisk in the milk and continue to mix until the mixture is combined and smooth. Add bourbon or rum, and stir. Refrigerate overnight or for up to 3 days.

Before serving, beat the egg whites in a large bowl or stand mixer until soft peaks form. Gently fold into eggnog until combined. Serve and garnish with freshly grated nutmeg.

Remember you can use Bourbon or Brandy in this.
