#MEwx Halloween: Milder temps with some rain moving in when the ghosts and goblins come out

This morning we have clouds with some rain this afternoon to set the Haloween mood. High 47°F. Winds SW at 5 to 10 mph.

Tonight we’ll have cloudy skies with some light rain early. Some patchy fog filled with ghosts and goblins will develop. Low 41°F. Winds light and variable.

Visibility is 10.0 miles / 16.1 Kilometers with the sun peaking through the haze.

We didn’t receive any measurable rain here over the past 24 hours. 

How about a stir-fry with seafood in it?

STIR-FRIED SEAFOOD

Serves:  6—3/4 cup

Vegetable cooking spray

1 medium-size red or green pepper, coarsely chopped

8 green onions, cut into ½ -inch slices

1 clove of garlic, minced

1 cup diagonally sliced celery

1 (8-oz.) can sliced water chestnuts, drained

5 oz. fresh snow pea pods

2 oz. fresh mushrooms, sliced

1 tbsp. cornstarch

3 tbsp. reduced-sodium soy sauce

3 tbsp. water

1 tbsp. vinegar

¼ tsp. ground ginger

6½ oz. packages of scallops, crab, lobster, and/or shrimp

  • Coat a wok or large, heavy skillet with cooking spray; heat at 325 degrees for 2 minutes.  Add 1 pepper, 8 green onions, and 1 clove garlic; stir-fry 15 seconds.
  • Add 1 cup celery, 8 oz. can water chestnuts, 5 oz. snow peas, and 2 oz. mushrooms.  Stir-fry 1 minute or until vegetables are crisp-tender.
  • Combine 1 tbsp. cornstarch, 3 tbsp. soy sauce, 3 tbsp. soy sauce, 3 tbsp. water, 1 tbsp. vinegar, and ¼ tsp. ginger, stirring until dissolved; add to wok.   Cook over high heat 350 degrees, stirring frequently, until sauce is slightly thickened.  Add seafood stirring to coat well.

 

NOTE:  Stir-Fried Seafood may be served over hot cooked rice that has been cooked with salt or fat.
