Tonight we’ll have More rain (up to another ½ inch)  with a low around 35°F.Winds could occasionally gust over 40 mph.

We didn’t receive any rain here over the past 24 hours.

Fish is a healthy and very tasty meal to stick with for the lousy weather this weekend, so how about this twist with Salmon?

SALMON TARRAGON

Serves:  4

1 lb. salmon fillet, cut into 4 pieces

¼ cup fresh lemon juice

½ tsp. dried tarragon

Pepper

1 tbsp. pimentos, drained, chopped

  • Wash and pat dry fish fillets.
  • Mix ¼ cup fresh lemon juice, ½ tsp. tarragon and a few dashes of pepper.
  • Arrange fish in a glass baking dish, thick sides outward, and spoon marinade over fillets.  Let rest a few minutes to absorb flavor.
  • Cover with wax paper and microwave on Medium High (70%) for 5 to 6 minutes, until fish flakes easily when pierced with fork.  Turn mid-cycle for even cooking.  Garnish with pimentos.
