#MEwx Warm, fog burning off and Scrambled French toast for Breakfast

Breakfast is important – remember that old saying “Eat Breakfast like a King, Eat lunch like a Prince and eat dinner like a pauper.” Okay, maybe you haven’t heard of it, but it’s a great way to lose weight. In the meantime try this for breakfast tomorrow morning.
SCRAMBLED FRENCH TOAST
2 eggs
1 cup milk
1 teaspoon vanilla
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
6 cups cubed day-old bread (1/2 inch cubes)
1 ½-2 tablespoons butter
¼ cup sugar (or to taste)
In a large bowl, beat eggs. Add milk, vanilla, cinnamon, and nutmeg. Add bread cubes and toss; let stand for 5 minutes. Melt butter in a large skillet. Add bread cubes and stir until cooked and browned. Gradually add sugar; stir to coat evenly. Cook until all sugar is dissolved, about 5 minutes.
3-4 servings. 1 serving = 1 cup, about 305 calories, 11 g fat, 127 mg cholesterol, 387 mg sodium.
