#MEwx mild, humid with seasonal conditions and a great crick pot recipe

Since temps are dropping and the rains are here, let’s drop back to some easy-going crock-pot recipes. How about beef stew?

BEEF STEW – Crockpot

1 lb lean beef chunks

2 – 6  medium potatoes – halved

A handful of baby carrots

1 package Onion Soup mix

1 cup  water

Cook on Low     8 – 10 hours

               High    6 -  8 hours

½  hour before serving:  microwave about 1 cup of vegetables of your choice -  corn, peas, lima beans – for 5 minutes.  Add to pot and simmer
