HAWAIIAN PORK ROAST
Serves: 8
1½ lb. tenderloin pork roast
1 small onion
½ cup orange juice
2 cans fat-free clear beef broth
2 tbsp. parsley
1 tsp. ginger
1 tbsp. garlic powder
1 tsp. black pepper
¼ cup soy sauce reduced sodium
½ cup teriyaki reduced sodium sauce
1 package baby carrots
2 cups potatoes
2 cups rutabaga
· Sear pork roast on all sides on high heat with ½ tbsp. olive oil.
· Add ½ cup orange juice, 2 cans beef clear broth, 2 tbsp. parsley, 1 tsp. ginger, 1 tbsp. garlic powder, 1 tsp. black pepper, ¼ cup soy sauce, and ½ cup teriyaki sauce. Bring to a boil.
· Reduce heat, cover and cook 25 minutes.
· Turn roast over and add 1 onion, baby carrots, 2 cups potatoes and 2 cups rutabaga. Cook for 30 minutes.
· Allow to rest 5 minutes before serving.
