Sunny, cool and a traditional baked apple recipe

Yesterday’s storm put just over 400,000 mainers out of power with just over 334,000 of us still without power this morning.

This morning we have generally sunny conditions despite some afternoon cloudiness. High near 55ºF. Winds SW at 10 to 15 MPH.

Tonight we’ll have mostly clear conditions with a chilly low around 35 ºF. Winds WSW at 5 to 10 mph.

BETTE’S BAKED APPLES

4 McIntosh apples, cored

2 tbsp raisins

2 tbsp sunflower seeds

1 tsp powdered cinnamon

2 tbsp frozen apple juice concentrate

1 tbsp water

Peel away about ½ inch of skin from top of apples and pierce with a fork in several places.  Fill cores with raisins, sunflower seeds, a few dashes of cinnamon, and a dab of apple juice.  Place in deep baking dish, add water and cover with vented plastic wrap.  Microwave on High for 5 to 6 minutes, turning dish once.  Spoon sauce over apples and serve warm or chilled.
