Tonight we'll have clouds with a slight chance of snow showers in the evening. Lows in the mid 20s with light and variable winds.

Here's another weight shedding meal for you. Hey, look at it like this – you sized the clothes you wanted for xmas to your pre-holiday goodies, per-COVID weight and measurements, right? C'mon, admit it. You did. So if you want to wear those Xmas gifts for Valentine's Day, now only about a month and a half away, you need to slim down. Did you get any lingerie for xmas?

 

TROPICAL ISLE CHICKEN SALAD

 

Serves:  4 (scant ½ cup)

 

1½ cups diced cooked chicken breast

1 cup 8-oz. can crushed pineapple, packed in fruit juice, drained

2 tbsp. chopped slivered almonds

½ cup chopped celery

¼ fat-free mayonnaise

1 tsp. brown sugar twin

 

  • In a medium bowl, combine 1½ cups chicken, 1 can pineapple, 2 tbsp. chopped slivered almonds and ½ cup celery.
  • Add mayonnaise and brown sugar twin.  Mix well to combine.
  • Refrigerate at least 30 minutes.  Gently stir again just before serving.

 

Hint:  It's equally good served on lettuce leaves or as a sandwich filling.
