ASIAN CHICKEN ROLL UPS

 

4 roll-ups

 

2 tbsp crunchy peanut butter

2 tbsp teriyaki baste and glaze (from 12-oz bottle)

1 tbsp firmly packed brown sugar

1 tbsp hot water

1 tsp sesame oil or vegetable oil.

4 flour tortillas ( 8 to 10 inches in diameter)

8 slices cooked deli chicken breast

1 ½ cups shredded iceberg lettuce

1 ½ cups shredded carrots

½ cup chopped fresh cilantro

 

Beat peanut butter, teriyaki baste and glaze, brown sugar, water and oil with wire whisk until smooth.  Spread about 2 tbsp peanut butter mixture over each tortilla.  Top each with 2 slices chicken, about 1/3 cup lettuce, and 1/3 cup carrots and 2 tbsp cilantro.  Roll up.  Substitution Stir-fry sauce can be used instead of the teriyaki baste and glaze.
