We didn’t receive any additional rain or snow here over the past 24 hours.

Sticking with breakfast recipes, why not make some scrambled French Toast to go along with the scrambled eggs?

SCRAMBLED FRENCH TOAST

2 eggs

1 cup milk

1 teaspoon vanilla

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

6 cups cubed day-old bread (1/2 inch cubes)

1 ½-2 tablespoons butter

¼ cup sugar (or to taste)

 

In a large bowl, beat eggs.  Add milk, vanilla, cinnamon, and nutmeg.  Add bread cubes and toss; let stand for 5 minutes.  Melt butter in a large skillet.  Add bread cubes and stir until cooked and browned.  Gradually add sugar; stir to coat evenly.  Cook until all sugar is dissolved, about 5 minutes.

 

3-4 servings.  1 serving = 1 cup, about 305 calories, 11 g fat, 127 mg cholesterol, 387 mg sodium.
