Time to start training for summer time. Break out the BBQ grill and ma this chicken recipe. Yes, Chicken again. You DO want to fit into that swim suit without any “overlap” this summer don’t you?

SUMMER CHICKEN KABOBS

4 servings/serving size:  3 oz chicken

¼ cup lime juice

2 tbsp olive oil

1 tbsp minced parsley

½ tsp dried thyme

1 garlic clove, minced

fresh ground pepper

2 whole boneless, skinless chicken breasts, cubed

1 small yellow squash, cut into 2-inch pieces

1 small zucchini, cut into 1-inch pieces

4 large cherry tomatoes

In a shallow dish, combine lime juice, oil, parsley, thyme, garlic, and pepper; mix well.  Add chicken, yellow squash, and zucchini, tossing to coat.  Cover and refrigerate for 2 hours.  Alternate chicken, squash, and zucchini onto each skewers.  Grill 4 inches from heat for 10 minutes, turning frequently.  Add cherry tomatoes to each skewer during the last 1 minute of cooking.   Remove from heat and serve.
