I have been chastised for not posting any low-cal dessert recipes. Okay, “guilty as charged.” So, let’s post a few low-cals this week.
LOW-CAL CHOCOLATE CAKE
24 servings
1½ cup flour
1/4 cup granulated fructose - or other sugar replacement
2/3 cup liquid shortening
1 cup low fat milk (2%)
½ cup unsweetened cocoa
2 eggs
1½ tsp baking soda
1 tsp salt
Preheat oven to 350 degrees. Grease and flour a 13”x 9" cake pan. Combine all ingredients in a mixing bowl and beat just until blended. Pour into prepared pan and bake for 40-45 minutes. Let cool.
