Sun, warm and making your own blueberry sauce

This morning we have a mix of clouds and sun. A stray shower or thunderstorm is possible. High 78ºF. Winds WSW at 10 to 15 mph.

Today’s Solar flux is 74, the solar wind speed is 334 Kilometers per second and the chance of a solar storm is 1%.

You may have noticed that grocery stores are stocking blueberrys.  Some are imported, some are locally grown and all taste terrific.  So why not make the following and put it together with a blueberry pie or tart recipe?  Of course, you can always spoon some of it on top of a heap of French Vanilla Ice cream, right?

BLUEBERRY SAUCE

Useful for pie filling and ice cream topping.

Serves:  8

1 tbsp. lemon juice

1 tbsp. Water

2 tbsp. Arrowroot powder

½ tsp. vanilla extract

2 12-oz. bags frozen unsweetened blueberries

1/3 cup granulated sugar

  • In a small bowl, combine 1 tbsp. lemon juice, and 1 tbsp. water.  Add 2 tbsp. arrowroot powder and stir until well blended.
  • Stir in ½ tsp. vanilla.  If the mixture is too thick, add a few drops of water.
  • In a large pan, combine the 2 packages of frozen blueberries and 1/3 cup sugar.   Add the arrowroot mixture, stirring to coat the blueberries.
  • This mixture will then be cooked over medium heat until thickened, stirring constantly to prevent sticking.
