Clouds, rain, warm temps and how to make relish and apple sauce

Over the past several months I’ve posted desserts and overall meals. Having been asked about “other things you need for a meal” I thought I’d post these handy and easy to make Apple Sauce and Relish recipes.
Jane’s Red Applesauce
Serves: 4
3 Golden Delicious apples, cut into eighths
½ cup fresh cranberries
1 tbsp frozen orange juice concentrate
1 cinnamon stick
4 pecan halves
Place all ingredients, except pecans, in a 1-qt measure and cover with well-vented plastic wrap. Microwave on High for 3 minutes. Stir, and microwave on High another 2 to 3 minutes, until apples are soft. Discard cinnamon stick, turn into a food mill, and grind over a bowl. Chill until ready to serve, and top with a few pecans.

CRANBERRY APPLE RELISH
Servings: 20 (1 oz) servings
1 (12 oz) bag fresh cranberries
1 cup Splenda
1 cup water
3 tbsp orange juice concentrate
1 medium apple, peeled, cored and diced
1/3 cup golden raisins
Place cranberries, Splenda, water and orange juice concentrate in a medium saucepan. Bring to a boil and boil 3-4 minutes or until cranberries start to thicken and water has reduced by about half. Remove from pan and place in medium bowl. Cover and refrigerate 2-3 hours or overnight. Add diced apple and half of the raisins to cranberries. Stir well. Refrigerate until ready to serve. Just before serving, sprinkle remaining raisins over cranberries as a garnish. Serve chilled as an accompaniment to roast meals or poultry.
